Home Sweet Home Pie

Ingredients:

For the Pie Crust:
– 2 1/2 cups all-purpose flour
– 1 teaspoon salt
– 1 cup unsalted butter, cold and cut into cubes
– 6-8 tablespoons ice water

For the Filling:
– 4 cups sliced apples (such as Granny Smith or Honeycrisp)
– 1/2 cup granulated sugar
– 1/4 cup brown sugar
– 2 tablespoons all-purpose flour
– 1 teaspoon ground cinnamon
– 1/4 teaspoon ground nutmeg
– 1/4 teaspoon salt
– 1 tablespoon lemon juice
– 1 tablespoon unsalted butter, cut into small pieces

For the Topping:
– 1/2 cup all-purpose flour
– 1/2 cup rolled oats
– 1/2 cup brown sugar
– 1/4 cup unsalted butter, softened
– 1/2 teaspoon ground cinnamon
– Pinch of salt

Instructions:

1. Prepare the Pie Crust:
– In a large mixing bowl, whisk together the flour and salt.
– Add the cold cubed butter to the flour mixture and use a pastry cutter or fork to cut the butter into the flour until the mixture resembles coarse crumbs.
– Gradually add the ice water, 1 tablespoon at a time, mixing with a fork until the dough just begins to come together.
– Turn the dough out onto a lightly floured surface and knead gently until it forms a smooth ball. Divide the dough in half, shape each half into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.

2. Prepare the Filling:
– In a large mixing bowl, combine the sliced apples, granulated sugar, brown sugar, flour, cinnamon, nutmeg, salt, and lemon juice. Toss until the apples are evenly coated.

3. Assemble the Pie:
– Preheat your oven to 375°F (190°C).
– Roll out one disk of pie dough on a lightly floured surface to fit a 9-inch pie dish. Transfer the dough to the pie dish and trim any excess overhang.
– Spoon the apple filling into the prepared pie crust, mounding it slightly in the center. Dot the top of the filling with small pieces of butter.

4. Prepare the Topping:
– In a medium mixing bowl, combine the flour, rolled oats, brown sugar, softened butter, cinnamon, and salt. Use your fingers to mix until the mixture resembles coarse crumbs.

5. Assemble the Pie:
– Sprinkle the topping evenly over the apple filling, covering it completely.
– Place the pie on a baking sheet to catch any drips and bake in the preheated oven for 50-60 minutes, or until the crust is golden brown and the filling is bubbling.
– If the crust begins to brown too quickly, cover the edges with aluminum foil to prevent burning.
– Remove the pie from the oven and let it cool for at least 30 minutes before slicing and serving.
